BBQ Bacon Wrapped Dates {Gluten Free and Paleo Recipe}

The first time I had bacon wrapped dates was at a restaurant I love in New York called Boqueria. They are a perfect combination of sweet and salty and are so good. I believe Boqueria fries theirs and adds cheese with the almonds, but I prefer to BBQ mine and skip the cheese to make them paleoish. Dried fruit has a lot of carbs and is not recommended for a paleo diet unless you’ve reached your desired leanness. These are certainly a delicious treat and make a great appetizer especially for entertaining or a cheat day. If you don’t have a BBQ, get one. It is seriously the best way to cook and a great excuse for eating outdoors. Otherwise you can also bake these in a toaster oven or oven.

Dates Pitted
Almonds or Pistachios
Bacon – cut into thirds

Here is how you make them:

1. Insert almonds or pistachios into dates
2. Wrap with bacon thirds
3. Secure with toothpick
4. BBQ on medium for 4-6 minutes rotating or until bacon is fully cooked

To bake, preheat over to 450 degrees and bake for 18 minutes rotating halfway through.

Delicious Pulled Pork Tacos {Gluten Free and Paleo Recipe}

Last week was crazy. Lots of early morning meetings, presentations, phone calls overseas, offsite meetings, after work dinners, juggling the dogs, seeing old friends, and trying to stick to our 5:30am workouts. I made this thinking we would have it for dinner and it ended up being at least 5 separate meals throughout the week. It’s delicious to have on hand so you don’t get tempted to eat something you really don’t want to and I never get tired of it. It’s perfect and easy for parties, groups, or potlucks. And, you can serve it with eggs and corn tortillas too – breakfast tacos anyone? Even better, it’s an awesome recipe for anyone who thinks they cannot cook. Don’t need to tell your guests, but there really isn’t any cooking going on. Just dump a bunch of ingredients into a crockpot, stir, let it cook for 4 hours, and pull the meat apart with forks. Really, it’s that easy.

Here is what you need:

Package of Boneless Pork Loin Chops
1 Jar Salsa Verde
1 Can El Pato Jalapeno Salsa
1 Can Diced Jalapeños {optional for those who like it spicy}
1 Diced Shallot
1 Tbsp Fresh Ground Pepper
1 Tbsp Minced Garlic
Lettuce Leaves

Corn Tortillas instead of Lettuce
Crumbled Cotija Cheese
Crema Mexicana

One of my favorite paleo blogs, sh1tcrossfitgirlsdo recently posted another similar version of this recipe plus served over a lettuce bowl – genius! They have awesome recipes – check ’em out!

Here are the steps:

Place all ingredients except lettuce and limes into a slow cooker or crockpot and stir.

Diced Jalapenos Pulled Pork Tacos

After slow cooking for 4 hours, pull apart meat with forks:

For a paleo version, serve with lettuce leaves. For gluten-free serve with warmed corn tortillas. And, don’t forget the lime wedges on the side.
